These 3 Tips Make for the BEST Poutine

There are people who love poutine, and others who don't.

We would argue that the ones who don't probably haven't had the good stuff!

IF someone doesn't like poutine, it's usually for one of these reasons:

  • The fries get soggy
  • It's bland
  • The curds aren't squeaky enough

With our three tips for making AWESOME poutine, you can fix all of these and then some!

 

TIP #1: Fresh Curds

This makes all the difference. The fresher the curds, the squeakier they are.  Kick up the squeak factor by warming them in the microwave for 10-20 seconds, adding them to the hot gravy before serving, or taking them out of the fridge an hour early.

TIP #2: Crispy Fries

Use extra crispy fries! We can't stress this enough. Try to avoid the thin fries commonly found in the freezer section - instead, opt for thick-cut or, even better, homemade. If making them from scratch, be sure to use russet potatoes for the best texture.

TIP #3: Good Gravy

Make the gravy count and those fries and curds will shine! Make sure it has lots of great flavour by using something like beef drippings or consommé. Be sure it's thick enough to 'cling' to the fries instead of running down into the bottom of the dish to create a soggy mess.
