Deli-Style Pasta Salad
A little spicy, a little tangy, a lot of yum factor. This pasta salad tastes like a favourite sandwich and will have everyone coming back for more.
Ingredients:
- 400-500g short-cut pasta
- 1/2 piece (roughly 100g) LQC Hot Jill
- Fresh tomatoes, diced
- Dill pickles, diced
- Pickled red onion (1/4 of a red onion diced, 2 tbsp sugar, 1/4 cup white vinegar: combine and let sit at least an hour or overnight)
- Salami, chopped
Secret sauce - combine the following to taste:
- Dill pickle juice
- Sriracha
- Dijon mustard
- Mayonnaise
Directions:
- Cook pasta, following package directions; rinse with cold water to cool.
- Mix up the secret sauce, adjusting to suit your taste.
- Add in remaining ingredients & toss to combine.
