Smokey Cheese Biscuits

Our smoked alpine cheddar "Old Smokey" is the secret to fantastic flavour in these flaky biscuits. Any mature cheese will do here, but our Old Smokey takes on a bacon-y flavour that goes oh so well in this cheesy recipe. Serve as a side to soup, stew, or chili.

 

Smokey Cheese Biscuits

Makes ~18 small biscuits.⁠ Recipe doubles well if you want to make extra to freeze!

Ingredients:

 

  • 3 cups all purpose flour⁠
  • 4 tsp baking powder⁠
  • 1/2 cup unsalted butter⁠
  • 1/2 cup - 1 cup shredded cheese (LQC's Old Smokey)⁠
  • 1/2 cups whole milk⁠
  • +/- 1 1/4 cups water⁠
  • 1 tsp salt, or to your preference

Directions:


1. Sift flour and baking powder into bowl; add salt.


2. Add butter; cut in until pea size.⁠

3. Add shredded cheese and milk to bowl. Start by adding just 1 cup of water and add more as needed.


4. When dough is too sticky to mix, knead sparingly, using flour if needed.⁠ Press into 1" thick disc and cut biscuits with a 2 1/2" - 3" circle cutter. (Option to sprinkle extra cheese on top before cutting.)


5. Bake at 400°F/205°C for 20 min or until golden.
