Mediterranean Orzo Salad
Non-boring salads and summer grilling. They’re a staple this time of year, yes? We keep things bright and flavourful by leaning on Sunshine Feta (it’s marinated in sunny Mediterranean flavours so yeah, no boring salads here ☀️).
* 2 cups orzo (dry)
* 2 tbsp olive oil
* 2 cups cherry or grape tomatoes, halved
* 1 cucumber, diced
* ¼ cup minced onion
* 1 piece (approx. 200g) LQC Sunshine Feta, cut into cubes
* Fresh basil leaves
* Salt to taste
* Italian or Greek-style Vinaigrette (or combine olive oil, white wine vinegar, lemon juice, honey, and Italian seasoning to taste)
1. Cook orzo following package directions. Rinse & cool; toss with olive oil to prevent sticking.
2. Cut the Sunshine Feta into cubes, reserving the seasonings. Discard the bayleaf and mince the remaining seasonings.
3. Add remaining ingredients & toss to combine. Serve with extra basil and a fresh squeeze of lemon juice.
