The beauty of farmstead production is being involved in the entire process.
Literally, from growing grass to milking cows to making cheese! Each step is intertwined with the next and even the smallest change on the farm could require an adjustment to our cheesemaking process.
1. Healthy Soil Grows Nutritious Grass
Soil health is imperative to a successful crop. Not only is it a determining factor of yield, but also nutritional value.
Excess whey from cheesemaking as well as our cows' manure are used to add nutrients to the soil that feeds our crops, helping to reduce waste and increase resource efficiency.
2. Nutritious Grass Feeds Happy Cows
Our dairy herd enjoys a diet based on grass, hay, and forage. This makes for nutritious, deliciously sweet milk; After all, you are what you eat!
We always make sure to cut, wrap, and store lots of hay for year-round use. This way, our cows can also enjoy good feed in the winter months when the grass is dormant.
3. Happy Cows Make Quality Milk
It's the golden rule of dairy farming! Happy cows produce the highest quality milk. We keep our girls healthy and happy with comfortable quarters, regular vet checkups, pedicures (actually), and access to good feed.
4. Quality Milk Makes Quality Cheese
A product is only as good as its ingredients. So when you start with sweet fresh milk, you just know it has the potential become an equally incredible cheese.
