
Creamy One-Dish Baked Feta Orzo
We can’t get enough of the well-known baked feta pasta and this one-dish method does not disappoint!
It’s unbelievably creamy, silky, and packed with flavour. And so, so easy to prepare.
Ingredients
- 5-10 cloves garlic, peeled
- 1⁄2 red onion, minced
- 2 tbsp olive oil
- 200g LQC Feta or Sunshine Feta
- 1 1/4 cups orzo, uncooked
- 2 cups diced tomatoes, undrained
- 1 1⁄2 cups water
- 1/2 tsp salt, to taste
- 1-2 cups spinach, roughly chopped
Directions
1. Roast garlic & onion for 15 min at 400°F (200°C) or until golden. Smash the garlic into a coarse paste.


2. Add to dish: feta, orzo, diced tomatoes, salt, and water.



3. Bake 25-30 min at 400°F (200°C) or until the liquid is mostly absorbed.


4. Mix together with spinach, add more salt to taste if needed, and serve.
