Minted Greek Pasta Salad

A summer classic. This fresh side makes a wonderful accompaniment to BBQ dinners, and is very easy to prepare.


  • 400-500g short-cut pasta
  • 1 piece (roughly 200g) LQC Feta
  • 1/2 cucumber, diced
  • 1 bell pepper, diced (can use half red, half another)
  • 1/4 cup red onion, diced
  • Fresh mint leaves, chopped
  • Greek dressing*


  1. Cook pasta, following package directions; rinse with cold water to cool.
  2. Add remaining ingredients & toss to combine.
