Minted Greek Pasta Salad
A summer classic. This fresh side makes a wonderful accompaniment to BBQ dinners, and is very easy to prepare.
Ingredients:
- 400-500g short-cut pasta
- 1 piece (roughly 200g) LQC Feta
- 1/2 cucumber, diced
- 1 bell pepper, diced (can use half red, half another)
- 1/4 cup red onion, diced
- Fresh mint leaves, chopped
- Greek dressing*
Directions:
- Cook pasta, following package directions; rinse with cold water to cool.
- Add remaining ingredients & toss to combine.
