Caramelized Onion & Cheese Pinwheels
There are a number of ways to use cheese and puff pastry for a simple and impressive appetizer. We used our Island Brie for these cheese & caramelized onion pinwheels, but they are equally delicious with an aged hard cheese like our Mt. Moriarty.
Ingredients
- Egg wash: 1 egg, beaten with 1 tsp water
- 1 sheet puff pastry
- 1 tbsp butter
- 1 medium onion, sliced thin
- 2 tsp Worcestershire sauce
- 2 tsp water
- ¾ wheel of Island Brie or Mt. Moriarty
- ½ tsp thyme (fresh or dried)
- Sea salt (to taste)
Directions
1. Bring a skillet up to heat and add butter. Reduce heat to medium-low and add sliced onion. Stirring frequently, cook until the onions are translucent and starting to brown. Add Worcester sauce and water to deglaze the pan. Scraping the browned bits from the pan, stir until the liquid has mostly evaporated. Remove from heat and set aside to cool.
2. Roll out a sheet of puff pastry on a lightly floured surface. Brush the surface with the egg wash. Spread caramelized onions evenly over the surface. Slice Brie no more than 1/4 “ thick. Lay the slices in three evenly spaced horizontal rows. Sprinkle with thyme and sea salt.
3. Starting at either the top or bottom, begin rolling the sheet up firmly, ensuring the outside edge has a good seal (the egg wash will help with that).
4. Using a sharp serrated knife, cut the roll into ½-¾” thick slices and place on a baking sheet. Brush the tops & sides with egg wash.
5. Bake 18-22 min or until golden brown. Cool to touch before serving.
